When I first saw the photograph for these muffins, I thought they were corn muffins due to their bright color. When I saw they had pumpkin in them I knew I would love them! The maple and the pumpkin flavors work really nicely together, and since you can use canned pumpkin, these are so simple and quick!

I've been looking for a muffin that I can take as an on-the-go breakfast!
