"This paleo banana bread also happens to be gluten free, dairy free, grain free, and refined sugar free. It contains only simple healthy ingredients such as coconut flour, bananas, eggs, extra virgin olive oil and raw honey. This works equally well as a healthy breakfast, snack or dessert. This is only takes about 10 minutes to prep and 50 minutes to bake. Serve this to brunch guests or pack it as a healthy snack in the kids’ lunch bags or take it to work for a yummy snack or an on-the-go breakfast!"

Ingredients

  • Bananas
  • Extra virgin olive oil
  • Raw honey
  • Eggs
  • Vanilla extract
  • Cinnamon
  • Coconut flour
  • Baking soda
  1. Add the bananas, olive oil, eggs, honey, vanilla extract, and cinnamon to a blender and blend until well mixed (or use an immersion blender and a large mixing bowl).

  2. Transfer to a bowl and add the coconut flour and baking soda and mix thoroughly, making sure to incorporate any lumps from the coconut flour.

  3. Pour into a parchment lined medium sized 9.25 x 5.25 x 2.75 inch loaf pan and bake at 350 degrees Fahrenheit for 50 minutes.
