This tomato salad includes fresh herbs, lemon juice, and garlic, making this dish a great topping for salads or tacos. Marinated Tomatoes Salad is made with fresh herbs, onions, garlic, avocado oil, and a splash of two secret ingredients: cooking wine and better than bouillon vegetable paste. The vinaigrette for this recipe features a delicious homemade dressing, and The tomatoes embrace the flavors of the fresh herbs."

Can you add cucumbers to this tomato salad? Yes. This recipe is PERFECT with cucumbers added. Best to use cucumbers that don’t have a lot of seeds.

What kind of herbs to add to this recipe? Any. Feel free to add any herbs you’d like to this recipe. I have made this recipe using the herbs I have on hand. Sometimes I would add basil, rosemary, parsley, dill, to name a few. Be mindful that some herbs like rosemary, basil, dill, and sage have more of a robust flavor. I would suggest tasting the dressing prior to pouring it over the tomatoes.

Can you use cherry tomatoes to make this recipe? ABSOLUTELY! This recipe works well with all kinds of tomatoes. I even made with the gourmet medley tomatoes.

Ingredients

  • 2 Large tomatoes
  • 2 tablespoons Olive Oil
  • 2 tablespoons fresh curly parsley
  • 1 tablespoon fresh cilantro
  • 2 tablespoons red onions, diced
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic chopped
  • 1 teaspoon better than bouillon vegetable spread

Instruction

  1. First, wash and pat dry the tomatoes. Then, slice the tomatoes about a ½ inch thick or desired thickness. Aligned the tomatoes in your desired serving tray or bowl.

  2. In a separate bowl or jar, add all of the ingredients and mix well.

  3. Spoon the dressing over the tomatoes or tip the bowl over to drizzle the vinaigrette over the sliced tomatoes. Then cover with plastic wrap and refrigerate for 30 minutes or more before serving.
