Sometimes when I make a traditional potato salad, I like to bake or roast the potatoes for a more toasty flavor, as opposed to steaming or boiling them. You could get a different spin on this healthier version by roasting the cauliflower florets in the oven! I am glad you left the hardboiled eggs in when you lightened up the recipe!

That's a great idea to roast the potatoes, kmcartoonity! It's too easy to boil potatoes too much, so I think I will have to try roasting them the next time I make a potato salad.

Oh man, this is such a great idea! I love cauliflower, so I certainly wouldn't mind substituting it for potatoes. If only I could convince my family the same...

Out with the potatoes and in with the cauliflower! This sounds like good idea. I like the list of ingredients especially the fresh dill and chives. I would substitute some or all of the mayo with zero fat Greek yogurt for more reduction of fats.

This would be a hit at a 4th of July party. What a great alternative to potato salad.

This is a great recipe for anyone who's tired of bringing a typical potato salad recipe to potlucks. The cauliflower adds an entire new level to potato salad!
