This Dreamy Vegan Pumpkin Pie uses all-natural ingredients to create a creamy, custardy, and all together dreamy piece of pie. You won't miss the dairy, sugar, or eggs. The filling tastes like a traditional pie - perhaps even better. It's wholesome, sweet, and irresistibly delicious. It is the perfect Thanksgiving dessert. After a huge and heavy feast, you'll need something light and guilt-free like this amazing pumpkin pie.

Cooking Time1 hr

Ingredients

  • 1 prepared pie crust
  • 1 can organic pumpkin puree
  • 3/4 cup organic coconut palm sugar
  • 1/4 cup cornstarch
  • 1 teaspoon egg replacer mixed with 1/4 cup water (you can also use 2 eggs)
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves

Instructions

  1. Preheat oven to 350 degrees F.

  2. Combine cornstarch with a small amount of water and stir to dissolve.

  3. Mix together the rest of the filling ingredients until smooth. Slowly stir in the dissolved cornstarch last.

  4. Carefully pour mixture into prepared crust.

  5. Bake for 1 hour, or until knife inserted into the center comes out clean.
