I used to have a hard time as a child eating my veggies but once my grandmother introduced this tasty dish into my life that changed. This recipe combines succotash, which is a simple sauteed mixture of corn, okra, lima beans, and crushed tomatoes, along with grilled salmon fillets."

This looks like a wonderful complete summer meal! The okra and corn in the veggie mixture gives it a real down - home southern flair. I have always been a big fan of salmon since it always turns out nice and tender and has a mild savory flavor. Not too mention it is a great source of omega - 3s!
