This overnight breakfast casserole is perfect for company it makes a lot of food, is satisfying, and is of course delicious. Make this Slow Cooker Southwestern Breakfast Casserole when you're expecting plenty of hungry people at your table. The best part about this breakfast is that you can quickly get everything ready and throw it in the slow cooker. Either get up a little early and cook it on high for four hours or make it right before you go to bed and let it cook on low overnight. This healthy breakfast recipe is loaded with fresh veggies, two different types of cheese, hash browns, and black beans. It's really hearty and filling. To complete the southwestern flare, try serving it with a salsa and chopped avocado.
