"These Keto Rhubarb Custard Bars are a spring dessert inspired by one of my favorite rhubarb dessert recipes pre-keto. An almond flour shortbread crust is prebaked and a rhubarb custard filling is baked over top of the shortbread crust. A whipped cream topping is spread over the cooled rhubarb bars and refrigerated until ready to serve. This is a delicious spring keto dessert that will satisfy even the pickiest eater in your home, no matter if they are keto or not!"
