    Chock full of broccoli, carrots and cheese, this Cheesy Loaded Casserole recipe is definitely one of the best family casserole recipes out there. Plus, this is one of the greatest easy cheap casserole dishes for picky eaters.

    Notes

    If you don't want to use frozen dough, or if you can't find frozen whole wheat dough, then use the dough from the Guilt Free Cracker Barrel Style Biscuits recipe or the Whole Wheat Bob Evans Dinner Rolls recipe.


     

    Cooking MethodCasserole

    Ingredients

    • 1 package frozen whole wheat dough
    • 1 large head of broccoli, chopped
    • 1 small onion, chopped
    • 2 large carrots, diced
    • 1 can organic cream of mushroom soup
    • Whole wheat breadcrumbs, to taste
    • 1/4 cup skim milk
    • 1/2 pound reduced fat cheese, grated

    Instructions

    1. Pre-heat oven to 350 degrees F.
       
    2. Spread out your frozen dough at the bottom of a baking dish, and bake for about 10 minutes.
       
    3. Cook broccoli, onion and carrots in saucepan. Add 3 tablespoons water. Cook about 10 to 12 minute then drain. Put the cooked vegetables on top of the dough.
       
    4. Mix together the soup and milk, then pour over the vegetables.
       
    5. Sprinkle cheese and bread crumbs on top, and bake for about 25 minutes.
