Fabulous Wild Rice Casserole

Vegetables and rice can help you make the greatest wild rice casserole. In only a few steps you can be eating this great meal.

Ingredients

  • 1/2 cup wild rice
  • 1/2 cup long grain rice
  • 1 cup onion, chopped
  • 1 cup celery, chopped
  • 3 tablespoons butter (margarine)
  • 1/4 cup soy sauce
  • 4 ounces can mushrooms, sliced
  • 2/3 cup water chestnuts, sliced
  • 1/2 cup almonds, slivered

Instructions

  1. Bring 2 1/4 cups water to a boil - add wild rice and simmer for 20 minutes, add white rice and simmer for 20 minutes more (If using brown rice simmer for 40 minutes together).
     
  2. Saute onions and celery in butter.

  3. Add soy sauce, water chestnuts, mushrooms, and liquid from mushrooms.

  4. Top with browned almonds and bake at 350 degrees F for 30 minutes.

I will make this but making adjustments again!!! I cannot have any type of nut and/or nuts at all. I can however have seasame seeds & only low sodium soy sauce & vey little of that. What is the difference between wild rice & long grain rice? I thought they were one & the same, see I'm still learning about cooking but love it. I will be back to rate it.
