This is a great recipe to y for anyone that might have a seafood allergy, or who might be worried about the safety or sourcing of seafood. Clams in particular dwell in the muck and silt at the bottom of the sea, and can collect more contaminants than other types of seafood. The nori really adds a nice flavor, and I think that the use of the mushrooms paired with the soy is a great technique. I doesn't taste just like the real thing, but it is a great substitute for those of us who just can't eat it.
