  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 medium onions, chopped
  • 4 medium carrots, thinly sliced
  • 4 celery stalks, thinly sliced
  • 6 springs fresh thyme
  • 1 bay leaf
  • 2 quarts vegetable broth
  • 8 ounces whole wheat rotini noodles
  • 1 cup cooked chickpeas

I like this vegetarian soup recipe since it is made with items I already have on hand in my fridge and pantry. The rotini and chickpeas give it substance and texture. You could even make a creamy version of this recipe by taking some additional cooked chickpeas and blending them up with some unsweetened plant based milk.
