4 Ingredient Pea Soup

Making healthy soup recipes at home may seem like a daunting task, but this 4 Ingredient Pea Soup recipe from Alli from An Open Cookbook shows you just how easy it really is. This is one of the best low calorie soup recipes for those who don't have lots of spare time and money. Alli says, "This super simple recipe with keep you warm on a cold winter evening. You can whip it up quickly on those busy week nights. Serve with a nice salad and slice of bread."

Yields4 cups

Ingredients

  • 2 tablespoons olive oil
  • 1 whole shallot, minced
  • 4 cups peas, frozen and defrosted or made from scratch
  • 1 cup vegetable broth
  • Salt and black pepper, to taste

Instructions

  1. In a medium pot, heat the olive oil on medium heat. Add in the shallots and cook until softened.
     
  2. Pour in the peas and vegetable broth and bring to a boil. Reduce heat to a simmer for about 10 minutes. Turn off heat and allow to cool a bit.
     
  3. Transfer to a food processor or blender. Puree until smooth.
     
  4. Pour back into the pot to warm. Season with salt and pepper and serve immediately.

I make pea soup a LOT in the slo-cooker, adding bay leaf, onion, celery.....and, always a little piece of meat!! This is an inexpensive and healthy way to eat the right foods! The soup is very smooth when cooked in the crockpot!! This is one of my favorites for cooler weather, at which time, I do a stove top procedure!

You can also add celery and carrots also onions basil, parsley, u do not need salt , pepper is ok do it in a crock pot about 4 hours and it doesn't have to be whipped because ite all in the smooth soup now and is very thick and great.
