This salad recipe is such a great way to take advantage of what you have in the garden! I love the rainbow of colors that each vegetable contributes to this dish, but the ingredient list is rather long. You can just leave some of them out if you don't have them on hand, or substitute what you've got! For example, I did not have a serrano pepper, so I used some diced pickled jalapenos instead. I didn't have any almond butter, but I had some sesame tahini and the dressing was still great.
