I absolutely love the idea of using mashed up avocado in place of the mayonnaise in this chicken salad recipe! Although it is still high in fat, the fat that is in it is much healthier than all the oil, sugar, and egg yolks that you would find in a typical prepared mayonnaise. This stuff would be amazing inside a lettuce wrap or even rolled up inside a whole wheat tortilla!

I think those are all great ideas for serving this salad, kmcartoonity! Thank you for sharing them with everyone.
