    Rotisserie style Duck Aloha

    This Rotisserie-style Duck Aloha is slow cooked to juicy, flavorful perfection is a coal-heated rotisserie. Try a tropical twist with the stuffing of apples and ginger!

    Ingredients

    • 2 (4-pound) ducklings
    • salt and pepper, to taste
    • 1/2 cup onion, chopped
    • 1/2 cup celery, chopped
    • 1 apple, chopped
    • 1/4 cup Sherry wine
    • 1/4 cup light soy sauce
    • 1/2 tablespoon ground ginger
    • 2 tablespoons lemon juice

    Instructions

    1. Prepare hot coals.
       
    2. Season ducklings with salt and pepper. Fill cavities with a mixture of onions, celery, and apple.
       
    3. Clip off wing tips. Run spit through birds lengthwise, catching the bird in the fork of the wishbone.
       
    4. Cook on a rotisserie for 2 hours or until tender. Baste with a mixture of sherry, soy sauce, ginger, and lemon juice during the last half hour of cooking.
