Cooking MethodGrilling

Ingredients

  • 8 ounces soy veggie crumbles
  • 2 large bell peppers, yellow or red
  • 1/4 cup cheddar cheese
  • 1/2 can black beans
  • 1 ounce parsley
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1/4 cup salsa

Instructions

  1. Halve the two peppers and clean the insides. Set aside.
     
  2. In a large bowl, add the veggie crumbles, cheddar cheese in small cubes along with the black beans, one tablespoon of olive oil, salt and pepper and diced parsley.
     
  3. Toss all ingredients in the bowl. Stuff peppers with the mixture. Coat outside of pepper with remaining olive oil.
     
  4. Place peppers on grill and grill on medium heat for about 10 to12 minutes, or until mixture within the pepper is melted.
