This looks like a great savory one pot skillet recipe that I will definitely be making this week. I'll probably open up a jar of oil cured Picholine or Kalamata olives for this recipe, since olives are the star of the show here. They have a great depth of flavor in comparison to standard canned black variety. This dish would be great top of Arborio rice, pasta, or even polenta!
