Light And Fluffy Banana Bread

Light And Fluffy Banana Bread is a basic banana bread recipe for someone looking for a great, low-calorie option.

Ingredients

  • 1 3/4 cup white whole wheat flour
  • 1 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2/3 cup sugar substitute suitable for baking
  • 1/3 cup butter substitute suitable for baking
  • 4 egg whites
  • 2 tablespoons skim or low fat milk
  • 1 cup ripe banana, mashed
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350 degrees F.
     
  2. Grease an 8x4x2-inch bread pan.
     
  3. Stir together white whole wheat flour, baking powder, baking soda and salt.
     
  4. Set aside.
     
  5. In a bowl beat sugar and butter substitutes until light and fluffy, scraping the sides often.
     
  6. Add egg whites one at a time. Add milk, beating until smooth.
     
  7. Add flour mixture and banana alternately, beating smooth after each addition.
     
  8. Fold in the nuts.
     
  9. Turn into pan and bake at 350 degrees F for 60 to  65 minutes, or until cake tester comes out clean.
     
  10. Cool in pan 15 minutes, remove and cool completely.
