Sweet Potatoes with Warm Bacon Dressing

Alli says, "This dish is a great accompaniment to your fall meals. The sweetness of the potatoes mixed with little flecks of bacon makes for a flavorful side dish. You can easily swap in regular potatoes instead of or in addition to the sweet potatoes. For a little extra sweetness, toss a handful of raisins in with the shallots."

Ingredients

  • 1 sweet potato, cut into cubes
  • 2 teaspoons olive oil
  • Salt and black pepper
  • 1 piece bacon
  • 1/2 shallot, finely minced
  • 2 tablespoons cider vinegar
  • 2 teaspoons olive oil
  • Salt
  • Red pepper flakes

Instructions

  1. Preheat oven to 450 degrees F.
     
  2. First, drop the sweet potato cubes into a microwave safe bowl. Toss with 2 teaspoon olive oil, salt and pepper. Cover the bowl with a wet paper towel. Microwave on high for 3 minutes. Carefully remove the wet paper towel because there will be a lot of steam. Pour the potatoes onto a parchment lined baking sheet. Roast in the oven for 15 minutes.
     
  3. While they are cooking, start preparing the dressing by cooking a slice of bacon in a medium sauté pan. Once the bacon is fully cooked, remove it and place on a paper towel lined plate. Pour a little bit of the bacon grease out of the pan. Toss in the shallots and cook until they are relaxed and lightly browned, about 4 minutes. Pour in the vinegar, olive oil, salt and red pepper flakes and stir until every ingredient is evenly mixed. Turn off heat and cover if the potatoes aren’t done yet.
     
  4. When potatoes are done, carefully pour them into a bowl and toss with the dressing and crumble the bacon on top and toss. Enjoy immediately as a side to scrambled eggs or at dinner with grilled pork tenderloin.

This a new way too eat sweet potatoes & can't wait too try this recipe.

This would have been good except for the Cider Vinegar. 2 Tablespoons is quite a bit, for 1 sweet potato. I added 2 eggs to this, and in every bite, the only thing I could taste was Cider Vinegar. I'm not even sure it's needed at all, but if you use it, use 1 Teaspoon tops!
