Hobo Baked Potato Casserole

With only 5 ingredients, just about anyone can afford to make this Hobo Baked Potato Casserole. This is one of tastiest healthy side dish recipes to serve next time you make steak or chicken casserole for dinner. Picky eaters especially love this dish.

  • 1/4 cup margarine, or the butter substitute of your choice
  • 3 large baking potatoes, rinsed well
  • Salt and black pepper, to taste
  • 2 tablespoons reduced fat Parmesan cheese, grated


  1. Preheat oven to 475 degrees F.
  2. In a small pan or in the microwave, melt the margarine.
  3. Cut potatoes in half lengthwise, and then slice them crosswise into slices about 18-inch think. Immediately line up in buttered 13x9-inch baking pan, with the slices overlapping.
  4. Pour melted margarine over potatoes. Season with salt and pepper.
  5. Bake 20 minutes.
  6. Then, remove from the oven and sprinkle with reduced fatParmesan cheese.
  7. Bake everything for an additional 5 to 7 minutes, or until cheese is melted and slightly brown.
