Guilt Free Mashed Potatoes

Need a taste of Thanksgiving all year long? You'll love these make ahead mashed potatoes. The texture of this guilt-free meal will keep you coming back for more.

Cooking Time30 min

Ingredients

  • 2 pounds small red potatoes, skins on, quartered
  • 1 small butternut squash, peeled, seeded and cubed
  • 1/2 cup evaporated skim milk
  • 1/2 cup butter substitute
  • kosher salt, to taste

Instructions

  1. Put the potatoes in a saucepan with water to cover by inch.
     
  2. Put the squash in another saucepan with water to cover by 1 inch. Bring both saucepans to a boil, lower the heat and simmer until they are soft. This should take about 15 minutes for the potatoes and 10 minutes for the squash.
     
  3. Warm the evaporated milk in a saucepan.
     
  4. Drain the potatoes and the squash and return to a saucepan.
     
  5. Over low heat, mash the vegetables, gradually adding the evaporated milk and the butter substitute.
     
  6. Stir in any salt and serve hot.
