Fruit Chutney Turkey

Ingredients
- 3 pounds turkey breast, boneless
- 1/2 cup chutney
- 8 3/4 ounces canned peaches, chopped (save liquid)
- 8 1/4 ounces canned crushed pineapple, drained
- 1 tablespoon currants
- 1 teaspoon cornstarch
- 1 teaspoon sugar free honey
- 1/4 teaspoon crushed red pepper
Instructions
- Roast turkey according to package directions. Wrap in foil and let stand for about 13 minutes.
- While turkey sits, prepare Bombay Chutney Sauce. In medium saucepan, combine chutney, peaches and syrup, pineapple, currants, sugar-free honey and crushed red pepper. Blend in cornstarch. Over medium heat, bring to a boil. Cook and stir until thickened (about 2 minutes).
- Remove foil from turkey. Spoon 1/3 cup Bombay Chutney Sauce over turkey. Slice turkey and serve with remaining sauce.
