Sometimes all you need is just a warm bowl of soup. Try this simple, cheesy soup recipe, which will be perfect to make on a bad weather day. This Homemade Cheddar Broccoli Soup will satisfy you and your family for dinner. Its thick, creamy texture makes every bite delicious. Try dipping fresh bread in it and enjoy the tasty flavors. You're even getting some nutrition with this cheese and broccoli soup from the fresh broccoli you will use. Make a new family favorite tonight and try this warm Homemade Cheddar and Broccoli Soup.


  • 1/2 cup cup finely chopped onion
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups whole milk
  • 3 cups chicken stock
  • 2 cups medium cheddar cheese, grated. Tillamook cheddar recommended
  • 1 pound steamed broccoli, cut into a large chop


  1. Saute onions in butter till tender.

  2. Add flour and cook a couple of minutes. Add milk and chicken broth, stirring constantly until thickened. Start with 3 cups of broth and add more if the soup gets too thick.

  3. Season with salt, pepper and a dash of cayenne pepper. Add grated cheese and stir until melted. Add broccoli and stir. Add a dash of paprika for a little color.
