"Tomato Bell Pepper Green Olive Salad is a perfect side dish when summer produce is abundant. It’s easy to make with only a few ingredients. And it’s naturally vegan and gluten-free! I just love the flavor combination of the sweet tomatoes and peppers with the briny olives. Of course if you prefer other ingredients, this salad is highly adaptable. If you don’t like green bell peppers, try another color like yellow, orange, or red. Not a fan of green olives? Substitute black olives or even avocado. The possibilities are endless!"

  • 1 cup green bell pepper
  • 1 cup green olives
  • 1 cup parsley
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar

I sometimes make a cucumber - tomato - olive salad very similar to this one, and everyone seems to enjoy it. I will have to try this pepper version! It would be fun to use those tri colored mini sweet peppers too. I love to bring salads like this to a picnic or outdoor gathering in the summer, since they are not mayonnaise based and therefore keep quite well even on hot days!
