Shanghai Chicken Salad

  • 5 cups cooked chicken, shredded
  • 3/4 cup hoisin sauce
  • 3 tablespoons Asian sesame oil
  • 6 cups iceberg lettuce or Napa cabbage, shredded
  • 3/4 cup green onions, sliced
  • 1 jar (20 0z.) Del Monte® SunFresh® Pineapple Chunks, drained
  • 1 cup red bell pepper, julienned
  • 1 cup yellow bell pepper, julienned
  • 1/2 cup oil
  • 1/4 cup white wine vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon dry mustard
  • 1 cup cilantro, stems removed
  • 1 cup peanuts, chopped


  1. Combine chicken, hoisin sauce and sesame oil in bowl; mix well.
  2. Combine lettuce and green onions and spread over serving platter.
  3. Combine pineapple, red and yellow bell peppers.
  4. Whisk together oil, vinegar, sugar and mustard. Toss 1/4 cup dressing with the pineapple and bell pepper mixture. Spoon over lettuce.
  5. Top with chicken. Drizzle remaining dressing over chicken. Sprinkle with cilantro and peanuts.
