When you're in the mood for a light, refreshing meal, try this Healthy Asian Quinoa Salad. This healthy vegetarian recipe is great for entertaining because it can be made in advance. Fresh vegetables like red peppers, cabbage, cucumbers and carrots give this dish some crunch and make it very filling. Top it with a ginger soy sauce dressing to give it a tangy flavor and it's ready to serve. It's perfect for lunch or dinner and does not take very long to make, so it's a great recipe to make when you're crunched for time.

Making a traditional romaine or spinach salad is healthy, but it can be boring if you eat it too much. That's why you should mix things up and make this healthy quinoa salad. Although you won't be eating as many greens, don't worry; quinoa is chock-full of healthy nutrients. So, you'll still be eating a healthy meal but it'll be a bit more exciting than a traditional salad.
