Fruity Fruit Salad

Often wish you had a recipe that included all of your favorite fruits like cantaloupe, honey dew, strawberries and grapes? Now you have one with fruity fruit salad. This easy fruit salad recipe combines the best fruits and juices to make the ultimate fruit salad.

Notes

  • You can substitute kiwi slices, pineapple chunks, papaya slices, or mango cubes for some of the melon balls for a more tropical-like flavor.

  • You can also add a little grated fresh ginger or ground ginger or a  dash of coconut extract.

  • Try serving this version in a hollowed-out pineapple half.

  • For a melon basket, use a non-toxic marker to draw a zigzag pattern on melon and cut deeply into fruit along pattern, separate halves, seed, and fill with fruit.

Ingredients

  • 1 cantaloupe, halved and seeded
  • 1/2 honeydew, seeded
  • 1/4 cup sugar substitute
  • 1/4 cup lime juice, fresh
  • 2 lemon juice, fresh
  • 1 tablespoon orange-flavored liqueur (optional)
  • 1 1/2 lime peel, grated
  • 1 cup fresh strawberries, sliced
  • 1 cup seedless grapes

Instructions

  1. Scoop flesh from cantaloupe and honeydew into balls with a melon baller and set aside.

  2. In a large glass or bowl, combine the sugar substitute, lime juice, lemon juice, orange liqueur, and lime peel; stir well to dissolve sugar.

  3. Add the cantaloupe and honeydew balls, strawberries, and grapes; mix gently.

  4. Cover the bowl with plastic wrap and refrigerate for at least one hour to blend flavors, stirring once or twice.

  5. Spoon the fruit mixture into serving bowls or hollowed-out melon halves, dividing evenly and serve immediately.
