Notes

Serves 6 – 8.

Serve with a green salad with light Italian dressing.

Ingredients

  • 1/2 pound asparagus
  • 1 cup canned mini corn, drained
  • 1/4 cup scallions, chopped
  • 1/2 pound scallops
  • 1/2 pound shredded Jarlsberg Lite cheese, about 2 cups
  • 6 large egg whites
  • 1 cup evaporated skim milk
  • 2 teaspoons soy sauce
  • Potato flakes, to taste

Instructions

  1. Preheat oven to 350 degrees F.

  2. Snap tips off asparagus. Chop spears in ¼-inch slices and discard woody ends. Plunge into boiling water for three minutes and then drain.

  3. Oil spray a 9-inch glass pie plate.  Line with half the asparagus and half the corn.  Cover with potato flakes, then with onion.  Arrange scallops on top, about an inch in from rim.  Sprinkle on half the cheese.

  4. Whisk egg whites.  Whisk in milk, soy sauce and pepper.

  5. Pour half the egg mixture into pie.  Top with remaining asparagus, corn and cheese.  Pat down.  Pour on remaining egg mixture.

  6. Bake 40 – 45 minutes.
