Vegetarian Breakfast Strata
A great brunch item, this vegetarian strata serves a whole crowd. Throw in your favorite vegetables, a few eggs and bake to perfection. This is a quick and easy recipe that can be prepared ahead of time and baked right in time for the brunch crowd.

Ingredients
- 6 slices firm white bread
- 1 pound whole kernel corn, drained
- 2 cups zucchini, thinly sliced
- 1 red pepper, chopped
- 2 cups Jack cheese, shredded
- 4 eggs
- 2 cups milk
- 1 teaspoon salt
- 1/8 teaspoon pepper
Instructions
1. Arrange bread in a buttered 9- x 13-in. pan. Layer with corn, zucchini, red pepper, and cheese.
2. Beat together eggs, milk, salt and pepper. Pour over vegetables. Cover and refrigerate 4 hours or overnight.
3. Bake uncovered in a preheated 375F oven 30 to 40 minutes or until lightly browned and puffed. Let stand 10 minutes.

This looks delicious, and you could really eat it for any meal. Not just breakfast! I also have some zucchinis that I need to use up before they go bad. I might make this tonight!
