Worlds Best Broccoli Salad

This tangy broccoli salad recipe for the World's Best Broccoli Salad is an unbelievable treat, particularly because it tastes very fattening--and it isn't! This broccoli salad recipe has all of the flavors of a rich, broccoli bacon salad recipe, but it's deceptively a vegetarian broccoli salad recipe. It includes imitation bacon bits rather than real bacon. And, while many broccoli salad recipes incorporate about a cup of mayonnaise, this recipe substitutes Greek yogurt for the mayo. The end result is a creamy and rich broccoli salad recipe that's packed with flavor. Because it's vegetarian, it's ideal for a potluck because all dietary needs can be met.

Chilling Time6 hr

  • 3 to 4 cups of fresh broccoli, cut into bite-sized pieces
  • 1/2 red onion, chopped into small pieces
  • 1/2 cup dried small imitation bacon bits

  • 1 cup grape tomatoes, cut into halves
  • 1 cup cubed Cheddar cheese (small cubes)
  • 1 cup low-fat plain Greek yogurt

  5. To prepare the dressing, mix Greek yogurt, Splenda, vinegar, and pepper together until smooth.

  7. Stir and toss the dressing mixture into the vegetable mixture.

  8. Let salad chill for about 3 hours.

  9. Season with salt and pepper to taste. Serve.

Since I am saving on a lot of calories by using the yogurt instead of the mayo, I'd go for real crumbled bacon as well. If you don't care for the rawness of the broccoli, you can always blanch it for a few seconds, plunge it into an ice bath, and dry it, before adding it in. (I use a salad spinner for this - you don't want to water down the dressing) I might even try making this recipe using chopped cauliflower, or even sliced fresh Brussels sprouts for an interesting twist!

I love broccoli but have never used it in a salad like this. This would be a great summertime lunch choice.

I make a very similar recipe to this one. It is always popular because it looks very pretty and tastes great. I use real chopped bacon. This is the magic ingredient which delivers a distinct taste to this salad. I don't use artificial sweetener. I find I only need a teaspoon of sugar to balance the flavors.

It would be nice if these recipes included number of servings. This looks really good.

Looks good!
