NotesCooking Just for Two? You can easily scale the portions of this recipe depending on how much meat you want to cook. I would suggest using about 1 lb. of chicken and cutting the marinade ingredients in half proportionally. Marinating and cooking times will stay the same!

I'm making this chicken for dinner tonight! It's currently marinating in my fridge. I'll report back and let you all know what I think!

Flavor was great. Just make sure to bring the chicken to room temperature before you start cooking it. The inside of my chicken took forever to cook all the way through. I ended up chopping the chicken into smaller chunks to speed up the process.
