  • 8 ounces whole grain noodles, cooked al dente
  • 3 cups lean chicken, cooked and diced
  • 1/2 cup celery, diced
  • 1/2 cup green pepper, diced
  • 1/2 cup onion, diced
  • 4 ounces fresh mushrooms, sliced
  • 1/2 cup low sodium chicken broth
  • 1/2 cup reduced fat Parmesan cheese, shredded
  • 2 tablespoons butter or margarine, melted
  • 1 cup reduced fat cheddar cheese, grated
  • 1/2 teaspoon basil
  • 1 1/2 cup fat free cottage cheese
  • 1 can low fat cream of chicken soup


  1. In a lightly greased slow cooker, combine whole grain noodles, chicken, celery, green pepper, onion, and mushrooms. Stir until all ingredients are evenly distributed and noodles are separated.
  2. Pour chicken broth over the top and stir.
  3. In a separate container, combine low fat Parmesan cheese, melted butter or substitute, low fat cheddar cheese, basil, fat free cottage cheese. Stir thoroughly.
  4. Add cheese mixture to crock pot and stir to combine.
  5. Pour low fat cream of chicken soup over the top. Stir until the contents have an even consistency and noodles, chicken, and veggies are evenly distributed.
  6. Cover and cook on low for 6-10 hours or cook on high for 3-4 hours.
