Even though it is an extra step and dirties an extra pot, I think the homemade bechamel sauce is well worth it. Prepared alfredo sauces can be mostly water and oil, and can be hiding a great deal of sodium. Not to mention lacking in flavor. This cheesy delight is sure to please the whole family, and I am always happy to get more veggies into the kids!

This looks like a great weeknight dish. I like that it is not too creamy and made with 0 fat or low fat milk. We love garlic at our house so I might add a bit more and leave out the salt as I think this recipe gets lots of taste from the cheese. I would sprinkle some bread crumbs on top.
