Betty's Best Barbecue Chicken Casserole

Ingredients

  • 16 ounces can low sodium pork and beans
  • 4 boneless chicken pieces
  • 1/4 cup reduced sugar ketchup (catsup)
  • 2 tablespoons peach preserves
  • 2 teaspoons onion, minced
  • 1/4 teaspoon reduced sodium soy sauce
  • 1/4 cup brown sugar

Instructions

  1. Preheat oven to 325 degrees F.
     
  2. Place beans in bottom of 2-quart casserole dish. Place chicken on top.
     
  3. Mix together reduced sugar ketchup, peach preserves, onion, reduced sodium soy sauce and brown sugar  Pour over chicken and beans.
     
  4. Cover and bake in oven for 1 hour and 45 minutes until golden brown.

This was a really hardy and delicious meal. I doubled the recipe (teenagers) and used 1/2 catsup and 1/2 BBQ sauce and everyone loved it. The leftovers were great too!
