This recipe for Almost Traditional Greek Pastitsio has reinvented the ground beef casserole in a lighter, lower carb, gluten free, and veggie filled way. This healthy recipe uses simple ingredient swaps like Greek yogurt instead of butter and heavy cream and spaghetti squash instead of noodles. It's still meaty, creamy and comforting, but without being as heavy as a traditional pastitsio. The flavors in this exotic dish are absolutely amazing. The warm spices added to the tomato sauce give a unique zing compared to the standard tomato sauce. The tang of the Greek yogurt also adds a nice contrast to the acidity of the tomato-based sauce. Once you pop this baby in the oven, you will counting down the minutes until it's done. Your kitchen is going to smell incredible. When it is finally ready, you will be eager to dig in to the casserole. It will look beautiful with its lovely golden top and the sauce was bubbling up around the edges. Yum.
