Poor Man's Potatoes

For a quick and easy side dish that everyone will love, try this Poor Man's Potatoes recipe. This low budget potato recipe will blow you away with its uncanny flavor.

  • Light cooking spray
  • 3 turkey bacon slices, cut up
  • 4 cups potatoes, sliced
  • 1/2 cup green bell pepper, chopped
  • 1/3 cup onion, chopped
  • 1 1/2 cup reduced fat cheddar cheese, shredded
  • 1/8 teaspoon seasoned salt
  • 1/8 teaspoon black pepper, freshly ground
  • 1 teaspoon butter or margarine (optional)


  1. Spray one side of an 18-inch piece of heavy foil with light cooking spray.
  2. On sprayed surface, arrange half of the bacon to within about 2 inches of the edge of the foil. Top with half of the potatoes, half of the green pepper, half of the onion, and half of the cheddar cheese.
  3. Top with remaining potatoes, green pepper, and onion. Sprinkle with seasoned salt and black pepper. Top with remaining cheese and bacon. Dot with margarine, if you like.
  4. Spray another 18-inch piece of foil on one side.  Place it, sprayed side down, atop potato stack. Seal all edges with a double fold.
  5. Place the packet on the grill rack directly over medium to medium hot coals. Grill for about 40 minutes or until potatoes are tender, turning the packet once.
