On Saturday mornings when everyone in my family is home in the morning, I like to make a breakfast for them that is a little more special than what they eat during the busy school / work week. We all love spinach artichoke dip, so I think this breakfast dish will be a great option, while still being good for you!

This sounds so delicious! I'm usually not a fan of artichoke unless it's in a dip, so this is perfect.
