Even though this bread recipe as a quite lengthy ingredient list, it is definitely worth it, for both its nutrition and it's great taste. When I bake I tend to opt for breads like this with a little bit of sweetness, as opposed to cakes or pies. This would be nice to serve at a brunch, or would make a nice after school snack for the kids. I love the addition of the crushed pineapple.

I love carrot cake and this bread seems like a slightly healthier take on that. This could be a great breakfast or dessert recipe. Yum!
