Baked Cinnamon French Toast

Give your french toast recipe a little kick with some cinnamon and vanilla! Baked Cinnamon French Toast can be prepared several hours ahead or even the night before baking. This would be the perfect breakfast casserole for christmas morning!

Ingredients

  • 8 slices whole grain bread
  • 1 1/2 cup evaporated skim milk (12 ounces)
  • 2 eggs
  • 4 egg whites
  • 1/4 cup brown sugar or equivalent Splenda brown sugar blend
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon cinnamon

Instructions

  1. Spray a 9x13-inch pan with nonstick cooking spray. Arrange the bread slices in the bottom of the pan.
     
  2. Whisk together evaporated milk, eggs, egg whites, brown sugar, vanilla, and cinnamon.
     
  3. Pour the egg mixture evenly over the bread slices in the pan. Cover tightly with plastic wrap or aluminum foil. Refrigerate for several hours or overnight.
     
  4. Preheat the oven to 350 degrees F. Spray the bread with cooking spray. Bake until lightly browned, about 30-35 minutes. Serve hot with maple syrup, powdered sugar, and cinnamon.
