If you're looking for a simple yet delicious stir fry recipe, then you must try this Mushroom Fried Rice. This easy fried rice recipe is super flavorful and very hearty, too. This healthy rice recipe is relatively low in calories and is packed with protein and fiber. The best part about this recipe is that it is ready in 30 minutes. It is made with brown rice, cremini or shitaki mushrooms, cabbage, and scallions. All of the ingredients are tossed together in a sweet Asian sauce. This incredibly tasty sauce is what really makes this dish stand out. You will love the unique flavor combinations.

Ingredients

  • 2 teaspoons reduced-sodium soy sauce
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 2 tablespoons dry sherry
  • 1 teaspoon molasses
  • 1/2 pound canola oil
  • shiitake caps or cremini mushrooms, finely chopped
  • 2 cups cooked brown rice
  • 6 cups shredded Napa cabbage
  • 3 scallions, thinly sliced
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon canola oil

Instructions

  1. In a small bowl, combine the 2 tsp. of soy sauce with the vinegar and garlic.

  2. In another small bowl, combine the 1 Tbs. of soy sauce with the sherry and molasses.

  3. Heat 1 Tbs. of the oil in a large, non-stick skillet over medium-high heat.

  4. Stir-fry the mushrooms until browned, 3-5 minutes.

  5. Add the soy sauce/vinegar/garlic and stir-fry until dry, 1-2 minutes. Remove from the skillet.

  6. Add the remaining 1 Tbs. of oil and stir-fry the rice for 1-2 minutes. Add the soy sauce/sherry/molasses and stir-fry for 1 minute.

  7. Stir in the cabbage and stir-fry until wilted, 1-2 minutes. Toss the mushrooms and scallions with the rice.
