Stir-Fried Green Beans

Stir-Fried Green Beans is a delicious stir fry recipe that everyone will enjoy. These Asian green beans are sweet, spicy, and oh-so-flavorful. The sauce is made with ginger, garlic, soy sauce, molasses, sesame oil, peanut oil, and a little bit of chili oil if you're feeling brave. Add a protein of your choice (chicken tofu, or shrimp) and you have complete meal all in one beautiful dish. You will love how colorful and tasty these green beans are. This healthy stir fry is filling, refreshing, and super easy to make.

Ingredients

  • 1 tablespoon minced ginger
  • 3 cloves garlic, minced
  • 1 1/2 tablespoon reduced-sodium soy sauce
  • 2 teaspoons molasses
  • 1 teaspoon Asian chili sauce (optional)
  • 1/2 pound boneless, skinless chicken breast
  • 2 tablespoons peanut oil
  • 1/2 pound green beans, trimmed and cut into 2" pieces
  • 1 red bell pepper, thinly sliced
  • 4 scallions, cut into 2" pieces
  • 1 teaspoon toasted (dark) sesame oil

Instructions

  1. In a small bowl, mix 2 Tbs. of water with the ginger, garlic, soy sauce, molasses, and chili sauce.

  2. Cut the chicken across the width into -thick slices then into 1pieces.

  3. Heat the oil in a large, non-stick skillet over medium-high heat. Stir-fry the green beans until tender crisp, 2-3 minutes.

  4. Add the red pepper and scallions and stir-fry for 2 minutes. Remove the vegetables from the skillet.

  5. Return the vegetables to the skillet and toss with the chicken and sauce. Drizzle with the sesame oil.
