Not only is this healthy vegetarian recipe low in carbs, but it also is great for those who are watching their sodium intake - fresh tomato slices are used instead of a prepared pizza sauce. These would be cute to cut into smaller wedges and serve them as an appetizer too. I'm going to grab a head of cauliflower the next time I go shopping!

Is there anything cauliflower can't do?! This looks amazing, can't wait to try it out!

I think this is a great idea! Cauliflower works on so many levels. Definitely going to have to try this soon!
