Not only is this healthy vegetarian recipe low in carbs, but it also is great for those who are watching their sodium intake - fresh tomato slices are used instead of a prepared pizza sauce. These would be cute to cut into smaller wedges and serve them as an appetizer too. I'm going to grab a head of cauliflower the next time I go shopping!
