"This mushroom goulash is so filling and comforting that you won't know it's meatless. It's also very easy to make. It tastes great served over healthy grains, with roasted or grilled veggies, or as a spaghetti sauce. Make it on the weekend and then enjoy for dinner during the week or take it to work to eat for lunch. And since it doesn't take a long time to make, you can also quickly whip it up on a weeknight."

I made an Italian dish which was called a mushroom ragu before, and it is very similar to this goulash. Whatever you want to call it, it is delicious, and the steaming skillet makes your house smell wonderful. I am not vegan, but mushrooms are one of my favorite things, and I would gladly eat them in place of meat any day. You can even make a sandwich out of this yummy stuff, like a vegan sloppy joe!

Oh man I LOVE goulash. And mushrooms! I have got to try this since I keep buying more mushrooms than I need lol

This looks so yummy. I love roasted mushrooms - they add such rich flavor, while still being healthy.
