Raw Chocolate Brownies with Acai Ganache

Makes12 squares

Ingredients

  • 1 cup almonds, soaked for 4 hours
  • 1 cup raw cacao, plus 1 tablespoon cacao
  • 5 dates, pitted
  • 1/4 cup coconut oil
  • 1 pinch sea salt
  • 3 ripe bananas
  • 1 tablespoon 'RioLife' Acai powder

Instructions

  1. Blend almonds, 1 cup of cacao, dates, coconut oil and salt in a high powered blender. You may need to add a little bit of water to make the mix sticky....a teaspoon at a time!
     
  2. When the mixture is sticky, pour into a small dish that has been greased with coconut oil.
     
  3. Clean blender, then puree bananas, acai powder and 1 tablespoon cacao.
     
  4. Pour banana ganache over brownie base.
     
  5. Freeze for 30 minutes, and cut into squares with a hot knife.
     
  6. Sprinkle some more cacao on the top and serve.
