Potato and Cabbage Soup

Create a healthy yet hearty vegetarian soup with potato, onion and green cabbage. This is a classic Irish soup with inexpensive ingredients but great taste.

Ingredients

  • 1 tablespoon olive oil
  • 3 tablespoons chopped onion
  • 1/4 cup potato, peeled and chopped
  • 3 cups green cabbage, finely chopped
  • 3/4 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 tablespoon flour
  • 2 cups broth or water
  • 2 1/2 cups skim milk
  • chopped parsley

Instructions

  1. Heat oil in a skillet or Dutch oven.
     
  2. Add onion and saute until tender but not browned.
     
  3. Add potato, cabbage, salt, nutmeg and flour and mix.
     
  4. Add broth, cover and cook 20 minutes.
     
  5. Puree in blender or use a food mill.
     
  6. Add milk and reheat. Serve sprinkled with parsley. Makes 5 cups.

Yummy, yummy. I did not process the cabbage and potatoes as I wanted to taste the chunks in my soup. Otherwise, I made no changes and this is so very quick and easy.

I make a similar soup but use many more potatoes than listed in this recipe. I also perfer more texture, so I don't puree it all. Add white pepper & crispy, crumbled bacon, if you like.

Hello myatochi, Since this was a reader submitted recipe it's possible that they just specified less potato on preference. Anyone making this recipe is more than welcome to try adding more. I'd suggest doubling the amount of potato to start. Thanks for the comment.

the quantities of 1/4 potato and 3 cups of cabbage seem lopsided. please check and verify that these measurements are correct. thanks.
