Cabbage Soup Recipe

This is the easiest way to make cabbage soup from scratch. This cabbage soup diet recipe is tomato-based with extra vegetables for variety. On top of that, it's one of the best recipes to try if you're looking to lower your calorie intake. Did you know that cabbage is very low in calories?

Ingredients

  • 46 ounces tomato juice
  • 4 cups cabbage, shredded
  • 1 medium onion, chopped
  • 2 large carrots, cleaned, skinned, and shredded
  • 1 cup celery, finely diced

Instructions

Mix everything together and bring to a boil. Reduce heat and simmer for 30 minutes. Refrigerate until cool. Serve chilled with sour cream.

I've tried many variations of cabbage soup over the years.Instead of tomato juice I like to add pureed tomatoes. I find this more economical, less salty and better tasting. I like to add spices like marjoram or oregano.

I make cabbage soup quite often as I find it filling and really healthy. I substitute pureed salt free canned tomatoes for the tomato juice, in order to keep the sodium content in check. I like to add whole caraway seeds and pepper.

This is such an easy recipe for cabbage soup. I split it into bowl sizes and add a variety of veggies to make each bowl unique. Great for us older gals who are trying to lose or maintain our weight.

If you like a little spice add spicy v-8 juice instead of the tomato juice

Wonderful...been making cabbage soup for years, only, I use canned tomatoes instead of the juice, less expensive!! And, in the summer months....use the slo-cooker!!! Also, must have a couple bay leaves, and anything else that you want to ad...green beans??

This can be served hot OR cold. I prefer it hot, and embellish it with green beans, baby spinach, and zuchini.
