This vegetarian salad recipe, although very different, looks so savory and full of flavor, that I wouldn't even miss the meat! The mushrooms give it a nice umami flavor, while roasted cauliflower give it a meaty texture. I want to try this salad hot over a bed of baby spinach leaves. If there is any left, I'll try it cold the next day!
