Make Ahead Apple Strudel

If you enjoy eating apples then you will love this Make Ahead Apple Strudel! Made with dried cranberries, apples, and oats this dish is nutritional and the perfect dessert to any meal!


  • 4 spy or golden apples, peeled, cored and chopped
  • 1 cup quick-cooking oats
  • 1 cup dried, unsweetened cranberries
  • 1/2 cup packed brown sugar substitute
  • 1 teaspoon cinnamon
  • 1 pinch nutmeg
  • 1/4 cup margarine, melted
  • 3 tablespoons water
  • 1/3 cup dry whole wheat bread crumbs
  • 2 tablespoons granulated sugar
  • 6 sheets low-fat phyllo pastry
  • 1 pinch allspice


  1. In large bowl, toss together apples, oats, unsweetened cranberries, brown sugar substitute, cinnamon, nutmeg and allspice.
  2. In small bowl, blend margarine with water.
  3. In third bowl, combine bread crumbs with granulated sugar.
  4. Arrange one sheet of phyllo on parchment paper-lined rimmed baking sheet with 1 long side facing you. Brush with some of the margarine mixture; sprinkle with rounded tablespoonful of the crumb mixture.
  5. Repeat with remaining low-fat phyllo, margarine mixture and crumb mixture, stacking to make 6 layers.
  6. Spoon apple mixture in strip along bottom edge of pastry, leaving 1-inch border.
  7. Roll up into cylinder. Score diagonally just through top layer into 8 to 10 slices.
  8. Brush with any remaining margarine.
  9. Wrap in plastic wrap; freeze in airtight container (can last for up to one month).
  10. When ready bake, place in center of 350 degree F oven for 50 to 60 minutes (or 1 1/2 hours if frozen, covering with foil if top is browning too much) or until apples are tender and pastry is golden brown.
  11. Let cool slightly. Slice at score marks to serve.
