Healthier Velveeta Baked Macaroni and Cheese

Velveeta cheese is delicious, but everyone knows it's not good for you. Luckily there is Velveeta light to give health conscious people a little relief. This great recipe for baked macaroni and cheese uses healthier Velveeta light to bring you the delicious taste of macaroni in a little healthier of a way.

Cooking Time40 min

Ingredients

  • 1 pound Velveeta Cheese Light, cut into chunks
  • 1/2 cup fat free milk
  • Couple dashes of cayenne pepper
  • 3/4 pound Elbow Macaroni, cooked and drained
  • 1/4 cup bread crumbs tossed with 1 tablespoon melted butter substitute

Instructions

  1. Place the Velveeta Light in a microwavable bowl, along with the fat free milk.
     
  2. Heat for two minutes on high and then stir with a wooden spoon. Heat for another minute, stirring again - continue until cheese is melted and sauce is silky smooth.
     
  3. Stir in cayenne pepper. Mix the cheese sauce and the macaroni together. 
     
  4. Pour into a 2 quart baking dish that's been sprayed with fat free cooking spray.
     
  5. Sprinkle the butter substitute bread crumbs over the top and then add a dash of paprika if needed. 
     
  6. Bake at 350 degrees F for 40 minutes or until golden brown and bubbling.
